The day began with an early morning smoothie. You can see the recipe here. It was awesome! I love vegetables and I love fruit, but if someone had told me yesterday that I would love a smoothie with spinach and strawberries together, I would have thought they were crazy. I am so impressed with how the Vita-Mix is able to really break up the spinach and make everything so creamy and smooth.
So, the day was off to a good and healthy start and with such a fabulous Vita-Mix beginning, nothing could get me down.... right?

This Sunday we stopped in at Counter Cafe for brunch. It wasn't as busy as normal and surprisingly we got a seat right away. It's in the location of the old GM Steakhouse on Lamar near 6th. It's a small little diner that serves mostly local food. Brent and I have been there a handful of times and the food is consistently good, especially the coffee! It's a little pricey as this time we ordered 1 pancake, 1 order of migas and 2 coffees and it was right at $20 bucks, but I get that that's the going rate for local food. My ginger pancake was fantastic and I literally squealed with delight on my first bite surprising both Brent and I... I had a little food-gasm. It was fluffy an delicious and hit the spot.
Dinner at Whole Foods, yeah yeah, I'll get to that. Let's talk Vita-Mix! This is definitely my latest love! We'll see how my fascination and affection continues in the next few weeks but I don't think I'm going to lose any excitement for this new appliance in our house. Let me tell you how we first met.... I bumped in to Vita-Mix, strangely enough, at the State Fair last week. Before that I had never heard of one. I became enthralled, like a bug flying toward the light, and was mesmerized by the demonstration. Brent finally pulled me away so we could go see some of the other sights at the fair. There were a few claims that I was a bit leery of but Vita-Mix remained on my mind.
So, Brent and I have been a little under the weather. Brent more so than me, and I decided that last night I wanted to make something healthy and homemade and hopefully kick start us back on the road to health. I've made this recipe before so I knew it wouldn't take too much time or too much energy. Brent hasn't been eating super good so I wanted to get us a good whole meal with protein, grains, and greens. Plus, this recipe is enough to give us something to munch on for several meals. It always taste so healthy and yet so delicious; I highly recommend it for a nice warm winter meal. I hope to get back to my normal fun blogs soon. Be well- Laura Tuesday night Brent and I were in for a treat as we were invited to our friend's new house for dinner! Brent was fortunate enough to work with Ted and Nicole on finding their first house and I was glad to finally get a chance to see it, since I had heard so much about it. I loved it so much and fell in love with a couple of things they can boast of. I love the fact that some kitchens these days are placing the stove where the bar normally is (I should have taken a picture) so you can face your guests while slaving over the hot stove. I think it adds so much to the dinner/entertaining experience.
My day started off with a 5 mile run; I was then treated upon returning, to my wonderful husband, Brent, making me a beautiful huevos rancheros dish. It was made with a bottom layer consisting of a corn tortilla with black beans and diced pickled jalapenos and a sprinkle of shredded mexican cheese. The second layer had a corn tortilla with two eggs over easy then topped off with his homemade ancho-tomatillo sauce. The pickled jalapeno was such a great addition with richness of the beans and the sauce, genius! When he wants to cook he most always tops himself... most of the time he likes to pretend to be lost in the kitchen. It was a super busy day and we parted ways after breakfast and Brent went to UrbanSpace for office hours and I went to a baby shower in Lakeway. Exhausted, and always looking for an excuse to eat out, we remembered it was the second week of Austin Restaurant Week. After some digging, we found another restaurant that offered a vegetarian option. I’m really working hard to use all of my farm to work ingredients this week. Farm to work is a great program they have at the State agency I work for where a farmer brings local produce to our work once a week. I really love it but sometimes it’s hard to be creative with squash and okra and other summer veggies week after week.
Tonight was an excellent dinner! I love my cook book, Vegetarian Cooking for Everyone; Deborah Madison has recipes that make my meals look like I I had to travel to Florida for work for a conference and had the great opportunity to go see my Mimi in Florida! I love her so dearly and always enjoy spending time with her and her meals can be matched by no other! There is something about the love you can feel in my grandmother's food and I absolutely crave her dishes. This is creamed corn, which she had specially grown, which she then shucked and prepped all by hand, black eyed peas (which I can NEVER make like hers) and pot roast. The potatoes and carrots are always cooked perfectly in her pot roast. I just don't understand, do you have to be a Mimi to be able to do that? Mimi’s meals are always served with fresh tomato slices, cucumbers, from the farmer's market, and Sister Schubert's rolls. It was awesome!
