This Sunday we stopped in at Counter Cafe for brunch. It wasn't as busy as normal and surprisingly we got a seat right away. It's in the location of the old GM Steakhouse on Lamar near 6th. It's a small little diner that serves mostly local food. Brent and I have been there a handful of times and the food is consistently good, especially the coffee! It's a little pricey as this time we ordered 1 pancake, 1 order of migas and 2 coffees and it was right at $20 bucks, but I get that that's the going rate for local food. My ginger pancake was fantastic and I literally squealed with delight on my first bite surprising both Brent and I... I had a little food-gasm. It was fluffy an delicious and hit the spot.
Brent had the migas, which I have had before and are just ok. I don't think their strength is migas but all the other breakfast items we have had have been very good.
There is a lady there that I believe is the owner; she's slightly older, small framed. Anyways, when she's there prepared to feel rushed and hurried through your meal. I always anticipate that she's going to be there, knowing she can be a bit gruff. She wasn't there this weekend so honestly we enjoyed ourselves a bit more and took a few more sips of coffee than normal. Overall, I really recommend this place I think it's just good to be forewarned about Miss Table-Turner.

Vita-Mix Mania Continues..
I am hopeful that I don't lose any friends over my excitement for our new Vita-Mix, really! I just can't seem to conceal my passion for this new appliance and I can seem to work it in to most any conversation. Vita-Mix is also a new verb in our house and it means, "to blend, puree, smoothie, make soup" etc. This is going to be a big vita-mixing week as I went to the grocery store and got lots of great fruits and veggies as well as ordering my first Greenling delivery for Thursday. Of course, I am starting with their "Juicer Basket" so I can blend all week long!
Tonight I made tortilla soup with black beans and corn and all the veggies pictured above. It was eye widening-slurpy sounding- mmmm making- fantastic-ness. Brent said, "It's good" which is equal to all my adjectives.
I promise I am not an investor in Vita-Mix but you guys, this is really cool. I put all the ingredients in the blender like you see in this picture.

Then, I cranked up the Vita-Mix.
Then, you will only believe me if you see it in action but you blend it for like 6 minutes and STEAM!! Hot steamy soup is created in my freaking awesome contraption of a blender. I could hardly believe it myself and as I write about it again my heart rate accelerates.
Clean up is so easy. 5 cups water a couple of drops of dish soap and blend for 60 seconds. Done.
