Happy Veteran's Day! First of all I would like to thank all Veteran's from the bottom of my heart. Particularly these days everyone knows someone who is in the military. I have personal friends who have been to Iraq several times and everyone I talk to has a friend, brother, sister, etc who has given up so much to fight for our country. All opinions on the war aside, our soldiers believe in the United States and do what it takes to get things done. All of our Veteran's, whether they have been to war or not have given of themselves for our great country. Thank you for your courage, bravery, and selflessness. My only wish is that we took better care of our warriors when they return from battle and my thoughts go out to you all.
On to a much lighter subject, after the Veteran's Day parade Brent and I went to Austin Java for breakfast. It's one of my favorite places downtown to eat because they have such a wide variety of choices for my vegginess. I had a black bean, tomato, and cheese taco. It was perfect! One is more than enough and I was stuffed and pumped after the taco and my fabulous cup of joe. Rachel worked at the counter and brought us our food. She was so great! Great personality, bubbly, and chatty but not so much you couldn't eat.. which is important! Brent suggested I take a picture with her and I wish I had. The mere thought of her great personality brings a smile to my face and if you go in a see her, please tell her I said hello.
Now on to Vitamix. If you've been reading my blog you have seen how much of a fan I am of this appliance. I have been using it so much lately and it really does make my day; the sound of the motor in the morning just makes me feel energized. We've had some really great smoothies and I'm still working on some of the soup recipes. I simply need to figure out what we like and don't like.
Today I definitely learned that taste is a matter of well, taste. I looked up this smoothie recipe and it was titled refreshing something-or-other and it used so many ingredients that I needed to get rid of in the fridge: carrots, celery, pineapple, tomatoes, parsley, etc. that I thought I would try it.
G-R-O-S-S. It was so gross that Brent tasted it and no kidding, gagged. I tried another recipe that used strawberries, spinach and something else green.. just as bad. Frustrated and fridge half depleted I just threw together a fruit smoothie and all was well. The point of this is that the Vitamix has been fabulous, but like Roger Huerta and this recipe, when things may seem perfect and too good to be true, many times they are. (Sorry Rog, I think you might get beat up a little on here but I've seen you fight on UFC and know you can take it.)
