Tonight I had dinner with my friend Sarah. After a long weekend of eating out and drinking I wanted something that felt and tasted good, so we went to the Raw Bar at Whole Foods. It never lets me down. I had their nachos made with seitan. I swear I could serve that to any of my carnivorous friends and they would love it! I will never understand how they make “sour cream” and “ranch dressing” taste so good without dairy; it truly is amazing to me. The delightful girl that prepared our meal suggested I
have my nachos served with the jalapeno lime dressing mixed in and it hit the spot! I could have eaten only half but it was just too good so I finished it. It’s nothing but veggies anyways, right? It’s good to be home and catch up with some of my girlfriends, from what I gather everyone had a very busy weekend.
I’m missing the cool weather in D.C. as Brent and I are also training for the marathon. Ugh, it’s brutal out there. I only ran for thirty minutes tonight but it felt much longer. I’m looking forward to catching up on sleep, catching up with friends, and getting back into our own hectic schedules back here in Austin.
