We went to Chuy's after a very long day at the outlet mall in San Marcos. I was a little beat down and a little grumpy when I walked in the door. The wait wasn't as bad as it looked and after about 20 minutes we were seated at our table.
Normally I would be upset because somehow the pictures of my vegetarian enchiladas didn't come out but honestly, the food isn't the focus of this blog, it was our server, Tim. "Timothy A" to be exact from my receipt. Tim turned my frown upside down and actually more into a face of pure amazement. As a former manager of a restaurant and the fact that my family owned a small restaurant during my latter highscool and college years, I'm pretty observant of service. Tim was truly amazing and a star in his own right.

We watched as he took the orders of a table of three behind us. He then came to our table, talked to me about all my dietary needs and helped me with my sauces and such. He then proceeded to another table, pleasantly chatted with them. Next, he moved on to a table of four and non-chalantly explained a few menu items and again, took their order. Big deal you say, right? WRONG, he did all of this without writing one thing down. That is nine orders and a chat with another two folks who weren't ready to order yet. He was casual and pleasant but I was frantic in my head... I couldn't even remember what I ordered at this point. So, of course, I spied. I waited as each tables' order came back and they were all right; not one order had to be sent back. He is the "Rainman" of waiters and still somehow has been blessed with social skills as well.
Of course, after I insured that he did this all correctly, I had to ask him about his genius! He was all cool and casual and was like, "Well, it's easy. There are only so many combinations of each dish" and blah blah blah. He completely downplayed his ginormous intellect.
I fell in awe even more as he talked about his travels. He just got back from Thailand and soon he is headed to Argentina for five weeks, so don't be sad when he isn't there and you ask for him. You know you want to spy too!
