So this week I made a fabulous Kale and butternut squash soup which incorporated many of my ingredients from my last Greenling delivery. I have been using the grocery delivery service for a couple of months now and have been repeatedly impressed with the quality of the products I have received. I also love that when you go shopping on their site that you can see what's local and what farms your produce, meats, and/or cheeses come from. The system is easy to use and keeps me from bringing home badly damaged leafy produce that's been crammed into my backpack on my scooter ride home. I used carrots, tomatoes, onions, garlic, butternut squash, and kale all from my delivery. It always feels so good to us so much fresh produce in one meal. You can see the recipe here. Not only did I get the pleasure of using fresh produce but I also got to use my Vitamix! A meal is almost guaranteed to be fantastic if I get to use my faithful blender. I'm not generally that great of a cook but I swear the Vitamix has turned me into a veritable Michelin star rated chef.. and I hardly ever brag about myself. So needless to say, even Brent thought it was pretty good and (whispering) there was no meat in it. We had the soup paired with a nice salad that also contained my Greenling produce and the meal was satisfying and healthy and delish.
