I know you aren't supposed to play with your food but I couldn't help it. I've never used a butternut squash before and it's big gaping mouth just looked like it was screaming for a face!
So this week I made a fabulous Kale and butternut squash soup which incorporated many of my ingredients from my last Greenling delivery. I have been using the grocery delivery service for a couple of months now and have been repeatedly impressed with the quality of the products I have received. I also love that when you go shopping on their site that you can see what's local and what farms your produce, meats, and/or cheeses come from. The system is easy to use and keeps me from bringing home badly damaged leafy produce that's been crammed into my backpack on my scooter ride home.

So, not only are you eating healthy, fresh, sustainable food but you further helping the environment... and it's so simple you feel like your doing something selfish, but really you aren't. I love it! I'm so anxious to get my second order from them today! I'll be sure to post what I get in my mystery local produce and farmstead box.

We received our first Greenling grocery delivery this week.  It was beautiful! I've really struggled with the cost effectiveness if this and think I've decided that this might be worth it for us. It isn't that much more expensive than the grocery store and I have the ability to choose local options if they are available! Besides, since we don't have a car we have to rent a one to go for bulk buying so I think this is actually going to work out to be a little cheaper. It's super simple and I loved that my first delivery came with a nice handwritten note thanking me for ordering; it was a really nice personal touch.

I accidentally bought 4lbs of carrots. Ooops. It was totally my bad but I need some serious carrot inspiration for this week!

My day started off with a 5 mile run; I was then treated upon returning, to my wonderful husband, Brent, making me a beautiful huevos rancheros dish. It was made with a bottom layer consisting of a corn tortilla with black beans and diced pickled jalapenos and a sprinkle of shredded mexican cheese.  The second layer had a corn tortilla with two eggs over easy then topped off with his homemade ancho-tomatillo sauce. The pickled jalapeno was such a great addition with richness of the beans and the sauce, genius!  When he wants to cook he most always tops himself... most of the time he likes to pretend to be lost in the kitchen.
It was a super busy day and we parted ways after breakfast and Brent went to UrbanSpace for office hours and I went to a baby shower in Lakeway.
Exhausted, and always looking for an excuse to eat out, we remembered it was the second week of Austin Restaurant Week.  After some digging, we found another restaurant that offered a vegetarian option.

We received our latest Dishalicious delivery on Wednesday and I have just now tasted the quinoa tabbouleh with almonds, preserved lemons, and herbs. Oh. My. God. It is so good!  It feels healthy AND tastes delish. The preserved lemon adds a brightness and flavor that just wakes up my mouth. Needless to say, I’m going to do my best to recreate this dish.  I never thought of making tabbouleh with quinoa, instead of bulgar. What a great idea!

So Brent and I went to an EcoSeries event and there were several local vendors there pimping there goods. I met one of the cofounders of Dishalicious, Louis. Before we started talking I tasted the food and it was, well, delicious! Then we started talking about their product and I got super excited.
